Happy Thanksgiving

This year, my family experienced the final product of the kitchen at the Pine Crest house as we know it. By this time next year, a new kitchen in a new location and with new appliances shall be the instrument of our cooking. The remodel is mostly finalized and will start sometime early next year. What we’re doing for Christmas is anyone’s guess.
This year’s feast was anchored by a 21.96lb turkey generously provided by Pelco. I couriered it up from Clovis, with my two cats and many loads of laundry. It was rather quickly deposited into a brown sugar and kosher salt brine where it rested (very coldly) for 16 hours or so. It was then stuffed, trussed, salted, peppered, and oiled for its long stay in the hot box. We cooked it to about 170F, extracted the stuffing (for additional cooking), and finished off the meal. Final result: a succulent turkey, moist, and delicious. Many thanks to AB.

There are many of you out there in the wide world preparing for a day of shopping. Great deals to be had, I’m sure. To you, I say: it’s just shopping. Fighting over a $3 blouse or a $25 DVD player isn’t worth it. Be merry and think of the holiday we all just shared. Love thy neighbor.
